A tall, refreshing mule is a darn good thing. Made with some Rhum Agricole and tart passionfruit liqueur, it’s a damn great thing. The Sidecar is one of the most criminally underrated classic cocktails, deserving a place alongside the great sours like the Daiquiri and Margarita. Made with Ferrand's new Yuzu Curacao in place of regular orange, it's taken to a totally new level. The depth of the Cognac is beautifully balanced by the bright and complex Yuzu notes and just a touch of Demerara Syrup for texture. Plus, get two cocktails in one: Pour equal parts Cognac and Curacao over ice with a lemon twist for a stellar after dinner sipper.

Don the Beachcomber's 1933 baroque tiki masterpiece remains one of the tentpoles of any good tiki bar, and is certainly one of the most complicated drinks to ever be considered a true classic. Three very different rums (in our version here, from Barbados, Jamaica, and a Guyana heavy overproof blend of various origins) blend harmoniously with tropical flavors of lime and grapefruit, and spice notes of cinnamon, clove, and star anise for a drink that is at once refreshing and brooding, delightful and foreboding, and of course, terribly potent. Don himself famously limited his guests to two of these to avoid them becoming Zombies themselves.

Martinique's national cocktail, made with their beloved Rhum Agricole (cane juice rum), is one of the Caribbean's great drinking traditions. Made up of a hefty measure of Rhum alongside a bit of sugar cane syrup and the tiniest pinch of lime, it drinks as somewhere in between a kind of lush, tropical old fashioned and a sophisticated, spirit forward daiquiri. Traditionally consumed at room temperature to savor every last bit of the grassy, aromatic rum, we think it's also pretty stellar served over a large ice cube, not unlike an old fashioned.

A seemingly crazy cocktail experiment gone wildly right, the Trinidad sour uses a full ounce of Angostura Bitters as its base, complemented by an equal measure of Orgeat, a nutty sweet French syrup made from almonds and rose water (or orange flower water), and  a wee bit of Rye whiskey. With its deep crimson color, it’s sure to be a conversation piece whenever served, and luckily it has the enchanting flavor to back it up.

Recipe:

+ 1 1/2 oz Rhum J.M. Blanc Agricole Rhum
+ 3/4 oz Chinola Passion Fruit Liqueur
+ 4 dashes Dale Degroff's Pimento Bitters

Pour over crushed ice in a Collins glass and top with Q Ginger Beer. Give a hefty stir and serve with a straw and garnish with a lime wheel.
